Coquitos.
250 gr.
shredded coconut 1 small
condensed milk 1 teaspoon vanilla extract 2 eggs
1-2 tablespoons of flour.
Preheat oven to 150 ยบ C. Beat the egg whites with a pinch of salt until stiff. Mix the yolks with the vanilla, coconut and condensed milk. Incorporate whites until stiff with encircling movements so as not to fall. If we see that the mixture is too wet, add 1 or 2 tablespoons of flour until a slightly firmer consistency. If this consistency is not firm enough that a cookie will get crushed and not the way we want. With the help of 2 teaspoons make small balls that are placed on baking paper on a baking sheet. Bake for 15 minutes or until lightly browned. Do not take a long time and that would be dry and the interesting thing is that they are juicy on the inside.
To decorate I used caster sugar and the second version, a chocolate sauce. This recetita is for beginners, very simple but the result is delicious, so I get to work. I hope you like it!.
