For 25 cookies:
113 gr. unsalted butter (room temperature)
25 gr.
white sugar 25 gr. brown sugar 1 egg yolk
1 / 2 cucahradita
vanilla extract 100 gr.
pastry flour 100 gr.
wheat flour 1 / 8 teaspoon salt 1 teaspoon baking

currants zest of 1 orange skin.
Preheat oven to 170 ยบ C.
Beat with beater bars or Kitchen Aid butter with both sugars for about 3 minutes until mixture is creamy, add yolk, vanilla and orange zest and continue beating until incorporated. In another bowl mix the 2 types of flour, salt and yeast and are incorporated into the first mixture. Join raisins (can sting a bit with the grinder) and knead with hands for a minute. Refrigerate wrapped in cling film for 20-30 minutes.
It extends to roll on a floured surface and are shaped with a cookie cutter. The thickness of the dough should be about 5-6 mm. Bake for 10 min. or until golden brown, we will have a tray lined with baking paper.
Remove from oven and cool completely on wire rack. This is a bit difficult if you love cookies .... sure you eat some that is still warm, or not?
This recipe was completely improvised. The truth is that when one is doing by taking the point of the cookies, it is not difficult to improvise, you can get by combining different types of sugar or flour, even these are very good by replacing part of the flour with oatmeal.
